SPINACH AND PEA SALAD

  •      1  6-ounce package frozen pea pods
  •      3  cups fresh spinach
  •      2  tablespoons sliced pimiento
  •      3  tablespoons extra virgin olive oil
  •      2  tablespoons vinegar
  •      2  teaspoons soy sauce
  •      1  teaspoon honey
  •      1  tablespoon sliced almonds

   Rinse pea pods under water until thawed. Drain. Cut pea pods in half crosswise. In a salad bowl place spinach, pea pods, and pimiento.
   For the dressing, in a jar combine salad oil, vinegar, soy sauce, and honey. Cover and shake well. Add almonds to salad. Pour dressing over spinach mixture; toss and serve immediately. Makes 4 side-dish servings.
